This week has been G-O-R-G-E-O-U-S!! Beautiful blue skies, lots of sunshine, and refreshing, crisp winter air. Unfortunately I’ve been so busy with school that running has been limited, but I did snap this photo on my way to class yesterday… only thinking of you. I also snuck in a nice long run Monday and Wednesday along the waterfront. I have to take advantage of any free moment these days. We’re expecting snow as early as next week. Last year the snow cut my workouts significantly. We Seattleites don’t drive in snow, period. So I couldn’t get to the gym, and with snow and ice I was hesitant to run outside. My neighborhood is quite hilly. This year I am determined to run regardless of the elements. For me the most critical part of my body to keep warm is my ears. I have to wear ear warmers, gloves too. If worse comes to worse I may be downloading Pilates sessions and working out on my hardwood floors.. unless.. can making snow angels count as cardio?!
I have finally given all my presentations, written and handed in papers. The only thing left to do is take my finals next week. Yahooo! Three and a half weeks of vacation. Aah, what will I do? Oh yeah, catch up on reading, girl time, and possibly treat myself to a much needed massage. One thing you can be sure of though, as busy as I’ve been my appetite certainly hasn’t suffered. I’ve been cooking as usual. Today I had a really leisurely morning while sitting at the kitchen bar with my breakfast oats, flipping through an REI catalog. How do they make under armour look so fashionable? I mean fashionable or not it’s a must have with these temperatures dropping, but I definitely look forward to running more when I have cute new gear. Bring on the snow.

1T SF vanilla creamer

I’m on a banana and honey kick. Mmm.. delish! Lunch was more of the typical Carissa-wich with a side of brussels sprouts and pearl onions. On toasted whole-wheat I had mixed greens, onion, tomato and pesto chicken breast. I find that my sandwiched get a little soggy if I pack them to work already prepared. So instead I keep the chicken in one ziplock, the tomato, onion, and greens in another, and I toast the bread before assembling everything in the breakroom. Yes, it takes a few extra minutes, but so worth it to have a sack lunch you’re looking forward to. By the way, I need to add toaster to my wishlist. I recently discovered that I love toast..
Tonight I had to get my run on at the gym. I didn’t really mind because it’s been a week since I’ve run on a treadmill, and because I have had the latest issue of Oxygen Magazine in my car just waiting for my next gym run! That magazine is the only one that I really look forward to reading every month. It is so full of good nutrition and fitness articles, without wasted pages on fashion and beauty. If I want fashion and beauty tips I’ll pick up an In Style. I prefer reading on healthy living. Before I knew it the treadmill jolted to a cool-down as I hit the 6o minute mark. That’s my que. I decided not to stick around to lift weights. It’s been a week so what’s one more day?
My Friday couldn’t be better. Sara and I are watching Say Yes To The Dress on TLC and having a bottle of vino. Livin’ the good life. I don’t know what it is about these bride-to-be shows. I love the fairytale weddings, the dress, the cake, the flowers. Did I mention cake? That reminds me of another show I love, Cake Boss. I’ve been watching these shows since high school. I really do enjoy being single. I have my girlfriends, my hobbies, me time, not to mention my commitment to fitness, school and work. Although when the time is right I know it will happen for me. Until then I’ll secretly heart wedding tv!
This weekend will be a lot of studying, but I’m in the mood for winter cooking. I’ll be blog snooping for some good, healthy comfort foods. Hope you have a fabulous weekend!!
